OUR VINEYARD

A unique village :

Hautvillers is located in the heart of the Champagne vineyards. It is the cradle of Champagne, whose natural effervescence was discovered by the famous monk Dom Pérignon, cellarer of the Abbey of Hautvillers at the origin of the secondary fermentation in the bottle that one calls today "The champagne method". He is also behind assemblies, key point of the quality of the wines of Champagne.

 

In the 17th century, Dom Pérignon controlled the vineyards and presses of the abbey and whose contribution to the method was to assemble the grapes before pressing.

A happy event allowed him to glimpse the fermentation in the bottle, thus allowing the Champagne to acquire an irreproachable quality which it did not possess until then.


During the twentieth century, winegrowers took the initiative to protect their wine by delimiting a particular area, and rules of production to obtain the Champagne controlled label of origin.

 

Today, in order to defend this integrity, the winemakers and the Champagne houses continue to increase this heritage and to share the prestigious values of this appellation thanks to the Interprofessional Committee of Champagne Wine (CIVC).

Benefitting from a privileged location, Hautvillers has remarkable panoramic sites, from where you can admire Epernay and the Marne valley.

 
Since 2015, thanks to UNESCO,
Hautvillers is honored to belong to the World Heritage of Humanity for its Hillsides, Houses and Champagne Cellars.


The grapes varieties :

There are 3 grape varieties in Champagne : Pinot Noir (38%), Meunier (32%) and Chardonnay (30%).

 

On our Estate, we find :

- The Meunier : 44% : This grape is predominant in the Marne Valley, it reveals the fruity side of Champagne

- The Pinot Noir : 42% : It brings body and power to the wine

- The Chardonnay : 14% : This variety brings freshness with its floral notes and citrus scent

 

The vine is a plant that requires daily attention. It is this benevolence that delivers the exception of Champagne wines.

Viticultural practices : 

Various tasks are undertaken to give it all the care necessary for its development :

 

 - Pruning : This is the first activity after the harvest. It starts in early November and ends around March. Pruning allows a better circulation of the sap towards the fruiting buds. It gives it its shape and promotes the rejuvenation of the branches.

 

-Tying : Following the pruning, the vine is tied on a support wire to prevent a disorderly growth.

It is carried out between February and mid-April.

 

- De-budding : In May, buds that do not give fruit are removed to favour the growth of the fruiting buds.

 

- Trellising : In order to obtain a better distribution of the foliage, this action aims to separate the branches, lying between two wires, by staples.

It starts at the end of May and ends at the end of June.

 

- Trimming : Still with the objective of obtaining a very good ripening of the grapes, it is necessary to cut the superfluous shoots from the end of the trellising period and until the harvest.   

 

- Grape harvest : This concerns the harvesting of grapes and is done by hand. These grapes then go to the presses.
